<p>I've been doing some research and I've seen that when crystals can change colour/design and change back to their original colour/design. Would this apply to Steven Universe too? We do know that Gems can change their form whilst they are poofed, could they colour change too after a large amount of time and/or certain conditions?

<p>The term Off-Coloured in SU doesn't mean "Different coloured", it means "Gems that don't fit Homeworlds ideals". In this case: Yes, Gems <i>can</i> "become" Off-coloured. Rose and the Crystal Gems did so the moment they rebelled.
</p><p>But in your definition: I don't know. It's been theorised that Eyeballs colour looks more faded then the other Rubies because she is older. So it is possible.

<p>Most processes that change a gems color are artificial industrial processes, generally to 'fake' a more valuable gem. For example most Citrine gems are actually manufactured by heat-treatment of purple amethyst (wouldn't that be incedible if it was done to our Amethyst and she turned yellow!!?).
