All of the human characters have their gender listed in the "sex" field on the infoboxes. But the thing is we don't actually know that any of those characters are cisgender. It's clear that the "sex" field usually refers to the character's gender, not their sex.
There are certain exceptions like Stevonnie because they're confirmed to be intersex, and possibly Steven because his name was given at birth and he was referred to as male since he was a baby; but for the most part we don't know.
