I'm betting it works by Emotion Lord rules, where he needs to focus on what he cares about MOST for his powers to work. However, the inverse can be said with his physical abilities such as running and lifting. Take for example in Together Breakfast, when Steven was able to lift and push the GIANT breakfast monster into the burning pit, or when Steven ALMOST was able to make the leap to the island where Pearl was on in "Rose's Scabbard" until Pearl stared at him angrily messing with his concentration and falling down. This would mean his physical powers work best when he's not thinking. So theoretically in order to master the full scope of his abilities, he'll need to change his mental perspective at the DROP of a hat. That boy's got his work cut out for him.
Steven gained immense strength when he pushed the giant breakfast monster down the pit because of how dire the situation was. The Gems inside the burning room were already having trouble, Steven felt a need to protect them and pushed the monster into the pit, if not it would have spelled trouble. In the floating island leap thing, Steven knew Pearl was really distraught about something that he had something to do with (which was her notion that Rose didn't keep any secrets from her), and Steven felt a need to help her. He felt somewhat responsible for this.

We also need to remember Cookie Cat how the immense pleasure of eating his favorite treat activated his gem, or in "Laser Light Cannon" Greg's words reassured him allowing him to activate his gem and therefore the light canon. So basically his powers are activated from a will to protect, happiness,& I still think him not thinking too much is part of the equation such as his fall in "Rose's Scabbard". In his own words he needs to "Go with the funky flow".

1. Part : I think you are wrong. Steven was just pushing the monster's weaknes - it's plate.
2. Part : I think you are right. Rose was realy emotinal and that power transported into Steven. But the only change is that Rose had healing tears, not healing saliva.
I think the saliva thing was a basic mutation, it happens.

Steven may have only pushed the plate of the breakfast monster but don't forget that that plate bore down the entire weight of the said monster. He would still need a large amount of strength to push it.
I have no idea what you're taliking about that part with Rose's healing powers.
When Steven summoned his shield the first time, I figured it his powers were activated out of sheer happiness and true positive emotions; Like just that pure burst of goodness from the cookiecat activated his shield.
