Well the Quartz category is pretty broad, so that would probably why two quartzes of different types can form a different gem like Smokey, but since it's not specified if Sapphires have different sub categories like Jaspers (orange striped and the different corrupted Jaspers). But it does seem likely for them to fuse to become a Sardonyx.
